Walter runs a true living museum at his restaurant, Sonccollay, where he cooks in at 10,000 year old, Pre-Incan tradition.  He invites all of his guests up to the roof to see the view prior to their meal – and loves to talk life, history, and language – the discussion alone is worth a visit, the food just brings it to another level.
